Coconut sugar retains small amounts of inulin fiber, iron, zinc, calcium, and potassium that are stripped from refined white sugar during processing. It has a lower glycemic index than table sugar, though it should still be used in moderation as part of a balanced diet. It can be used as a 1:1 substitute for brown sugar or cane sugar in most recipes.
